Goal #34: Bake a loaf of bread from scratch.

I actually completed this goal way back in December when I made my college roommate’s practically-fool-proof recipe for pumpkin bread. My first attempt was a little iffy; the bread came out super doughy and gooey, but not in the good way. So I made it again later that month, and it was a total success. Moist, cakey, and delicious.

But it was Christmas, and apparently I was too preoccupied with presents! and family! and colored lights! and all that jazz to remember to take a photo of my bread and, you know, tell you all about it.

So I decided to make bread again last night, just to prove I could still do it. This time, I used a recipe from SparkPeople.com for lemon bread. I figured I should try to find a recipe that was at least a little on the healthier side, since I fully intended to succeed and knew I’d want to eat this bread all day long.

I made a double batch, because I had some fresh raspberries that I thought might taste nice in this bread, so I made one plain loaf and one with the raspberries. Let me tell you: improvisation is a beautiful thing. The raspberry lemon bread turned out really nicely. The plain one was fine, but I think the lemon I used was on the smaller side, so it wasn’t enough lemon flavor for my tangy tastebuds.

The one thing about this recipe is that the bread turned out pretty dense, and a little chewy. I guess I should’ve been a bit more wary of the recipe because it’s only received one rating so far (where most of the recipes I try on SparkPeople have tons of rave reviews). But the good news is, the bread turned out edible, yet not so dangerously delicious that I’ll be tempted to eat it all at once.

So there you have it. I have proven (twice now!) that Tabitha Carnes can follow a recipe. (Just don’t ask me to come up with something of my own from scratch. THAT is a disaster waiting to happen.)

    Mmm…. looks yummy! Too bad you can’t transmit smells over the internet– I loooooove the smell of freshly baked bread, and I’ll bet your house smelled divine yesterday!

    btw– here’s a testament to how slowly this week has been going– I saw in my feed reader that you had a new post, and thought– oh, it must be the Weigh-in Wednesday post! Durrrr….

    Very cool! I agree too bad teleporting doesn’t exist lol sounds delish :) Glad you accomplished another goal!

    Lemon bread sounds good right now, but then I’d probably go and make it all unhealthy by adding butter and popping it in the oven… ha. Congrats on improvisation :)

    it’s amazing how putting a ring on the finger makes one want to be a little suzy homemaker. or maybe that’s just me.

    either way, i’ve been wanting to do stuff like that, but unfortunately at this point, we’re too broke for me to be experimenting all the time, so i guess we’re just going to have to wait until we have more disposable income.
